BB-Ates (BB-8 eggs)

I promised a few new recipes before May 4th!  So, just in time for Easter, and May the Fourth I present to you our BB-Ates appetizers!

We first served them at our May the Fourth be with You Party 2 years ago, and they went like hot cakes.  The kids must have eaten a half dozen each.

Needed:

  • 6 Hardboiled Eggs (makes 12 BB-Ates)
  • A big “gob” of Mayo
  • 1/2 – 1 Jar IKEA Sjörapport (Seaweed pearls), or inexpensive red roe or caviar
  • Tabasco Sauce (to taste)
  • Yellow and Red Food Coloring
  • 1 can sliced Black Olives
  • Toothpicks

How To:

  • Boil the eggs for about 12 min
  • Cool the eggs in cold water, then peel
  • Cut the eggs width-wise (across the round part) in 4 slices. You should have 2 slices and 2 domed end parts per egg.
  • Carefully remove the yolks, and place into a bowl
  • Place the whites slices (BB-8’s body) on a serving platter
  • Cut the top “dome” for each egg in half, making 2 half circles (BB-8’s head)
  • Cut the bottom tip of the egg in 2 thin slices, making 2 circles (BB-8’s white tummy circle)
  • Using a fork, mix the yolks and mayo until a smooth creamy consistency (start with less mayo, and add more as needed)
  • Add seaweed pearls or roe, and mix carefully
  • Add tabasco to taste
  • Add food coloring to get a nice orange color
  • Separate the domed end pieces from the jar of olives, or cut the ends off whole olives (save the rest for homemade pizza!)
  • Space out the hollowed out egg slices on a serving platter, leaving enough space to add the heads and antennas for all the little droids
  • Use a spoon to put a dollop of yolk mixture into the hole of each egg slice.  Smooth flat with a rubber spatula.
  • Attach the little heads with toothpick antennas
  • Place the remaining round egg slices over the orange circle to complete the BB-8’s bodies
  • Add the olive eye (you can a tiny bit of yolk mixture to get it to stick)

Tips:

The BB-Ates are not really finger food.  They might fall apart when you lift them up with your fingers, so make sure to offer forks and serve with a cake cutter or a turner (wide spatula).

If you want them to be less, erhm, Star Wars-y, you can just cut the eggs in half length-wise (like deviled eggs) and fill the cavity with the mixture.  You can then skip the olive, but maybe add some dill instead (for color).
